Influenced by the flavors of Peru's famous Aji Amarillo chili, we created a Peruvian Rub made with Aji Amarillo, Achiote paste, Red Chile, Black Pepper, Coriander, Cumin, Mexican Oregano, Sea Salt. We particularly like to rub Shrimp with Olive oil and this rub and grill them. However, I wouldn't tell Chicken skewers that! Want to try something really good? Brine a whole Turkey breast with Water, Apple Juice, Orange Juice, Cilantro Stems over night. remove from brine,  let stand at room temperature for about a half an hour, Seasoning generously with this Rub. Roast in oven or on the Smoker/Grill using indirect method. If possible add a few Mesquite wood chips...serve with Arroz Verde, and grilled vegetables.
