Dragon BBQ Rub

This rub is inspired by the Chinese Smokehouse. It includes Lapsoung Soushong a Chinese Black tea smoked over pine; Mandarin Orange, Chinese Five Spice, brown Sugar, Soy Sauce powder, chili, and Applewood smoked salt.

Use on Pork Ribs, Short Ribs, Chicken or Salmon. Can also be added to stir fry vegetables or rice for an exotic flavor.


Remove Membrane from underside of Ribs, make a 1/2 inch cut between each bone. Rub Dragon BBQ Rub on flesh side of ribs, wrap in aluminum foil and place on rimmed sheet pan or cookie sheet. Bake 3 hours at 300 degrees, carefully open the aluminum foil packet. Serve with steamed Jasmine rice and stir fried vegetables. For an authentic touch, create a glaze with Guava puree and Gochujang paste, a Korean Chili Paste, both available at Oriental Specialty Markets.
