Coriander is the seed from the pink and mauve flowers of a delicate plant from the parsley family we know as Cilantro. Coriander is a spice while the leaves Cilantro are herbs. Coriander is one of the world’s oldest spices. Most likely native to Middle East and southern Europe the spice was wide spread from introduction by the Romans to the British to the Far East. The seed now produced in North Africa, Morocco, Russia, Holland, India, South America and Romania, coriander is a mild seed with a flavor similar to that of a lemon and sage blend and sold both whole and ground. In Middle Eastern cooking coriander is used in sausage making, curries, and the whole seeds are used in pickling and special drinks.

Coriander has been dated back to 7000 BC, it was found in the tomb of Tutankhamen, it was mentioned in the old testament of the Bible in both Exodus and Numbers, where the color of manna was referred to coriander. It has throughout time been used medicinally as well, treating digestive problems, bladder and urinary tract infections, allergies, diabetes, anxiety, high blood pressure, insomnia, and vertigo.
