Cinnamon is that first spice you think of when you think of Apple pie…and probably the most common baking spice. There are two major types. Canela Sri Lanka “true cinnamon” as it it sometimes referred too, is made from the dried bark of various laurel trees and is native to Sri Lanka and the West Indies. The Cassia grade or Korintje “A” Grade has an oil content of 3% and has a more intense flavor this is often the one found in our recipes. It’s the one you sprinkle on toast in the morning, on oatmeal and many other of our favorites. Cinnamon another of the trading spices is found in cuisines from Indo-China to the Mediterranean, in the New World from Jamaica to Mexico and in most of our favorite deserts. Where would Apple Pie and Cinnamon rolls be without it?! It’s ironic however; that the spicy-sweet flavor found in nearly all our favorite sweet confections can actually help control blood sugar problems. High blood sugar levels attack arteries and veins, increasing the risk of heart disease six fold!

Another well-known cinnamon is Vietnamese cinnamon or Saigon cinnamon. It comes from the inner bark of an evergreen tree of the species Cinnamomum Loureiroi. Its naturally high concentrations of cinnemaldehyde give it an intense flavor and prized reputation among other types of cinnamon. We use this in out Asian Spice blends, Chinese Five Spice and several others.

Cinnamon may help prevent or treat Cancer, Cholesterol high “LDL”, Diabetes type 2, heart Description of disease, high blood pressure, Insulin résistance, Polycystic Ovarian syndrome, stroke, high Triglcerides, vaginal yeast infections and wounds.
