2 tablespoons avocado oil
1 teaspoon Pineapple Vinegar (not everyone ha this on hand you can use Red Wine Vinegar, Rice Vinegar or Apple Cider Vinegar I like to have stuff on hand inexpensive from Amazon)
1 Tablespoon fresh Pineapple juice
2 teaspoons Al Pastor spice  Mix well.

1 lb. Pork Sirloin Chop, boneless sliced as thin across the steaks as you can, I had mine partially frozen for this.

1 cup Fresh Pineapple chopped well with juice. (plus 1 T of Juice)
1 cup Shredded Cabbage
4 slices Red Onion shaved very thin
4 Tablespoons Mexican Crema or Sour Cream
3 teaspoons minced cilantro
1/2 cup Cojita Cheese
Good Corn Tortillas

1) make Marinade with first four items
2) Slice Meat Thin Toss in Marinade to mix well. Refrigerate at least an hour
3) Heat grilled or hot pan add 2 Tablespoons of Avocado Oil when shimmering add pork strips do this in batches if needed.
4) Fry with chopped Pineapple and it's juices. Caramelize.
5) Mix Cilantro and Cream then mix with Cabbage and red Onion.
6) build taco with warmed tortilla Pork/ Pineapple mix, Cabbage Mix and Cheese

This is sweet-spicy Taco so don't expect blazing heat.
