Provence Roast Chicken

Provence Roast Chicken


Garlic4 cloves 2 cloves minced 2 smashed whole

Herbs de Provence¼ cup

Olive Oil¼ cup

Kosher Salt1 Tablespoon

Black Pepper½ teaspoon

Whole Chicken1 giblets removed, rinsed

Lemons2 each 1 sliced, 1 wedges for serving


Preheat oven to 475 degrees

Mix minced garlic, olive oil, Herbs de Provence, salt and pepper in a bowl. Rub the mixture over chicken and under skin of breast. Place smashed garlic, sliced lemons in the birds cavity. Place a wire rack in a roasting pan and set Bird on the rack. Roast chicken 25-30 minutes or until chicken begins to brown nicely; reduce heat to 350 degrees. Continue roasting until temperature at the thigh is 165 degrees. Let rest 5 minutes before carving. Serve with lemon wedges.
