Native to the Mediterranean, bay leaves are picked from a densely leafed evergreen that grows profusely along the Mediterranean Sea. Generally used to flavor soups, stews and roasted meats their aromatic flavor is enhanced as it cooks, they should be removed before serving. Its scent giving plant compounds are among the most powerful antioxidants in existence. Some people claim putting a couple leaves in stored grains helps to repel insects; in fact they are routinely used to preserve food.
